Prepare the filling: cut the ham into small cubes, crush the walnuts. In a bowl, mix the grated Comté, ham, walnuts, and parsley. Generously pepper and refrigerate for 10 minutes.
- 2
Preheat the oven to 180°C. Cut each brick sheet in half lengthwise. Brush each strip with olive oil on both sides.
- 3
Place a strip in front of you. Place a tablespoon of filling at one end. Fold into a triangle by folding the corner over the filling, then continue folding the triangle along the length. Seal the end with egg yolk. Repeat for the other 7.
- 4
Place the samosas on a baking tray. Brush them with egg yolk. Bake for 15 to 18 minutes until golden and crispy. For a gratin effect, broil for 2 minutes, watching closely.
- 5
Let cool for 3-4 minutes before serving. Serve with a green salad or red pepper chutney.

- Cold filling: easier to handle and prevents the pastry from softening. Brushing the brick: crucial step for ultra-crispy samosas. Tight folding: ensures even cooking and prevents bursting. Finely grated cheese: melts better and more evenly.
