Prepare the filling: cut the ham into small cubes, crush the walnuts. In a bowl, mix the grated Comté, ham, walnuts, and parsley. Generously pepper and refrigerate for 10 minutes.

Preheat the oven to 180°C. Cut each brick sheet in half lengthwise. Brush each strip with olive oil on both sides.

Place a strip in front of you. Place a tablespoon of filling at one end. Fold into a triangle by folding the corner over the filling, then continue folding the triangle along the length. Seal the end with egg yolk. Repeat for the other 7.

Place the samosas on a baking tray. Brush them with egg yolk. Bake for 15 to 18 minutes until golden and crispy. For a gratin effect, broil for 2 minutes, watching closely.

Let cool for 3-4 minutes before serving. Serve with a green salad or red pepper chutney.
