Prepare ingredients: cut veal into cubes. Peel and slice carrots, dice turnip. Clean and halve mushrooms. Finely chop onion.

Brown the meat: melt butter, gently brown veal pieces without searing.

Add onion: add chopped onion and sweat for 3 minutes until translucent.

Dust with flour: sprinkle flour over meat and mix for 1 minute to coat.

Add liquid and simmer: gradually add hot broth while stirring. Season. Cover and simmer on low heat for 1 hour.

Add root vegetables: add carrots and turnip. Continue cooking for 20 minutes.

Incorporate mushrooms: add mushrooms and cook for another 10 minutes.

Thicken the sauce: mix cream and egg yolk. Off heat, stir into the pot. Do not boil afterwards.

Finalize: sprinkle with parsley, adjust seasoning. Serve hot with rice or steamed potatoes.

- Prepare the blanquette a day ahead: flavors develop even more. For a rustic version, replace turnip with potatoes. Never boil after adding the cream-egg yolk mixture for a perfectly smooth sauce.
