Preheat the oven to 180°C. Prepare 8 small cones from thick aluminum foil. Layer two wonton sheets, brush with melted butter. Wrap them around a cone to form a cone, seal the edges well. Place on a baking sheet with parchment paper.

Brush the outside of the cones with butter. Bake for 10-12 min until golden and crispy. Let cool for 2-3 min, remove the molds carefully, then let cool completely.

In a bowl, mix the chopped pistachios, chopped cranberries and honey until coated. Set aside. Cut the brie into small cubes of about 1.5 cm.

Just before serving, preheat the oven to 160°C. Place brie cubes at the bottom of each cone. Bake for 3-4 min, until the cheese begins to melt.

Remove the cones from the oven. Immediately top with the pistachio-cranberry mixture, press lightly. Sprinkle with a little fleur de sel. Serve immediately.

- Seal the tip of the cone well to prevent it from opening during baking. Watch the wontons' color, they brown quickly.
- Choose a creamy brie but not too runny. Prepare the pistachio-cranberry mixture at the last moment to keep it crunchy.
- Serve the cones warm, standing in cone holders or on a bed of coarse salt. Pair with a white wine like Chardonnay.
