    Preheat the oven to 180°C (350°F). Prepare a baking sheet with parchment paper. Melt the butter. In a bowl, crumble the feta. Add the grated cheese, chopped herbs and lemon zest. Pepper and mix.

    Place a filo sheet, brush it with melted butter. Place 1 to 2 tablespoons of filling in a log shape on the short edge. Fold the sides, then roll firmly into a cylinder. Place on the baking sheet, seam side down. Repeat.

    Brush the top of the rolls with the remaining butter. Bake for 18-20 minutes until golden and crispy. When out of the oven, drizzle with honey and sprinkle with fresh herbs and lemon zest. Let cool for 2 minutes.

    Meanwhile, prepare the sauce by whisking the Greek yogurt with olive oil, lemon juice, salt and pepper. Serve the warm rolls with the sauce.

  • Fragile filo pastry: Work quickly and keep it moist. A slightly damp towel placed on top is essential.
  • Warm butter: If it's too hot, it will cook the pastry; too cold, it will be difficult to spread.
  • Tight rolling: Essential so the rolls keep their shape and don't open during cooking.
