In a thick-bottomed saucepan, pour the whole milk. Add the sugar, pinch of salt, and the split and scraped vanilla bean. Bring to a simmer over medium heat.

Add the round rice to the simmering milk. Stir once to prevent the grains from sticking together. Immediately reduce the heat to minimum.

Cook for 30-35 minutes over very low heat, stirring regularly with a wooden spatula, especially during the last 10 minutes. The rice should absorb the milk while remaining creamy.

Check that the rice grains are tender but not mushy. The consistency should be creamy and slightly liquid - the rice will continue to thicken as it cools.

Off the heat, add the butter cut into small pieces. Gently stir until completely melted and incorporated, giving the rice pudding its shine and final velvety texture.
