Prepare the béchamel: melt 20g butter in a saucepan over medium heat. Add flour and stir for 2 minutes to get a white roux. Gradually pour in warm milk while whisking vigorously. Let thicken for 3-4 minutes until the sauce coats the spoon. Season with salt, pepper and a pinch of nutmeg.

Assemble the croques: preheat oven to 200°C (390°F). Spread half of the béchamel on the 4 bread slices. On 2 slices, place 2 ham slices each and sprinkle with half of the Gruyère. Close with the remaining slices (béchamel side inward).

Oven baking: coat the top of the croques with the remaining béchamel and sprinkle with the remaining Gruyère. Place on a baking sheet and bake for 10-15 minutes until golden brown.

Egg cooking: meanwhile, melt butter in a pan and crack the eggs into it. Season with salt and pepper and cook for 2-3 minutes over low heat, keeping the yolks runny.

Plating: gently place a fried egg on each croque-monsieur out of the oven. Serve immediately.

- Bread: Use brioche bread for more softness
- Cheese: Comté or Emmental can replace Gruyère
- Béchamel: Prepare it in advance to save time
- Egg cooking: Cover the pan for perfect white cooking
- Serving: Serve with green salad with light vinaigrette and pickles. A glass of dry white wine or brut cider will pair perfectly.
