Prepare the filling: Sweat the chopped onion in olive oil for 4-5 min. Add frozen spinach and 60ml water, cook for 5-7 min until evaporated. Transfer and let cool.

Finish the filling: Crumble feta into the cooled mixture. Add mozzarella, oregano, egg white, and pepper. Mix and taste.

Assemble the sandwich: Preheat oven to 180°C. Cut pastry into two rectangles. Spread filling on one rectangle, leaving a border. Cover with second rectangle and seal edges.
