Take the puff pastry out of the fridge 10 min. Preheat oven to 200°C. Line a baking tray with parchment paper.

Melt butter, let cool slightly and mix with herbs, salt and pepper. Set aside the herb butter.

Unroll pastry on a floured surface. Cut into 12 squares of 7x7 cm. Place 10g of cheese in the center of each.

Fold each square into a triangle to enclose the cheese. Press edges to seal and crimp with a fork.

Beat egg with milk. Brush each triangle with this mixture, then with the herb butter. Add seeds if desired.

Place triangles on the tray, spaced apart. Bake 18-20 min until golden and crispy.

Let cool 5 min on a rack. Decorate with pomegranate and rosemary. Serve warm.

- Keep pastry cold for better puffing. Refrigerate for 5 min if it softens.
- Seal edges well to prevent cheese from leaking during baking.
- Apply herb butter after egg wash to prevent burning and keep herbs fresh.
- For even baking, place an empty baking tray under the one with pastries.
