    Prepare the bread: Place the bread on a board. Using a large sharp knife, make deep crosshatch cuts, first in one direction, then at 90°, without cutting through the bottom. Gently separate each square to create pockets.

    Stuff the bread: Preheat the oven to 180°C (convection if possible). Place a ramekin of water at the bottom of the oven. Soak all the slits in the bread with the warm garlic butter. Generously insert the grated mozzarella into each slit.

    Bake: Completely wrap the bread in aluminum foil. Bake for 15 min. Remove the foil, increase the temperature to 200°C (or activate the grill) and continue baking for 5-8 min until the cheese is golden and the crust is crispy.
