Prepare cheese: Cut cheese into 2 cm thick squares. For easy cutting, freeze for 10 min. Pat each square dry with paper towel.

Marinade: In a bowl, mix extra virgin olive oil, chopped garlic, parsley, chives, chopped rosemary, chopped cranberries, chili, and pepper. Set aside.

Cooking: In a pan, heat butter and oil over medium heat. When butter turns golden, add cheese squares. Cook 3-4 min without touching until golden, then flip.

Flavoring: Lower heat, pour marinade around the squares. Simmer 1-2 min, basting cheese with the juices.

Serving: Serve immediately on a warm plate. Drizzle with pan juices, sprinkle with sea salt flakes, and garnish with rosemary.

- Medium heat: Key for golden, crispy outside and melting inside, without burning.
- No salt during cooking: Cheese (halloumi, feta) is already salty. Sea salt flakes at the end are enough.
- Cranberries: Chop coarsely to spread flavor without overpowering.
- Cheese alternative: Halloumi is ideal as it doesn't melt. Grilling feta or paneer also work.
- Serve hot, as a starter or cut into bites for appetizers. Pair with grilled bread, lemon, a dry white wine or light beer.
- Lemon: Add lemon zest to the marinade. Honey: A drizzle for a sweet-salty note.
- Sun-dried tomatoes: Replace cranberries with sun-dried tomatoes.
- Herbs: Replace rosemary with oregano or mint for a Mediterranean touch.
