Wash the zucchini and cut it into 5mm thick slices. Cut the bell peppers into 1cm wide strips. Thinly slice the red onion into thick slices.

In a large pan, heat olive oil over high heat. Arrange vegetables in a single layer. Season with salt, pepper and paprika. Grill for 8-10 minutes, turning halfway through, until tender and nicely marked. Let cool slightly.
