Prepare the fries: peel and cut the potatoes into sticks. Rinse and dry them thoroughly.

Heat the oil to 150°C and fry the potatoes for the first time for 6-7 minutes. Drain.

Before serving, heat the oil to 180-190°C and fry a second time for 2-3 minutes until golden. Salt.

Prepare the cod: heat a pan over medium-high heat. Brush the fillets with olive oil, then season with paprika, salt, pepper and lemon zest.

Grill the fillets for 3-4 minutes on each side, basting with lemon juice during cooking.

Plating: arrange the cod and fries on a plate. Drizzle with extra lemon juice if desired and serve with a salad or tartar sauce.

- For tastier fries, add paprika or dried herbs (rosemary, thyme) during the first frying.
- Fish variant: replace cod with pollock, hake or salmon.
- No deep fryer? Use a deep pan and do not overload it for even cooking.
- Homemade tartar sauce: mix mayonnaise, chopped pickles, capers, parsley and lemon juice.
- Storage: fries are best fresh. Cod can be kept for 1-2 days in the fridge and reheated gently in a pan.
