In a bowl, mix the cooked rice (preferably cold), tomato paste, chopped basil, olive oil, salt and pepper. Add the pinch of sugar to soften the acidity of the tomato paste.

Take a portion of the rice mixture, form a hollow in the center and place a mozzarella cube. Close gently forming a well compact ball.

Arrange the balls on a baking sheet lined with parchment paper. Brush lightly with olive oil. Bake at 180°C for 18-20 minutes until golden brown.

Serve hot with homemade pesto sauce or tomato sauce.

- Use rice cooked the day before for better ball consistency
- Mozzarella melts well but you can use smoked scamorza for more flavor
- Alternative cooking: Pan-fry the balls 3-4 minutes on each side
