Clean the sardines by removing scales and guts. Rinse thoroughly in cold water and pat dry with paper towels.

Generously brush the sardines with olive oil on all sides and lightly salt.

Heat a grill, pan, or barbecue over high heat until the surface is very hot.

Place the sardines and cook for 2 to 3 minutes per side, until golden and crispy.

As soon as they come off the heat, immediately drizzle with fresh lemon juice. Sprinkle with chopped parsley and serve hot.

- To prevent sticking, make sure the grill is very hot and lightly oiled before cooking. A fish grill basket is ideal.
- Vary the flavors by adding a pinch of sweet paprika or curry to the olive oil before brushing.
- Serve with grilled vegetables (zucchini, peppers) or chickpea purée for a complete meal.
