Filling preparation: Cut the ham into small regular dice. In a bowl, mix it with grated Comté, fresh cream, Provencal herbs, a pinch of salt and pepper. The cream helps bind the filling without making it soggy.
- 2
Shaping the rolls: On a floured surface, divide the dough into 4 equal parts (about 75g each). Roll out each portion into a rectangle about 15x10 cm. Place 2-3 tablespoons of filling in the center, leaving 2 cm border. Roll up gently while pressing well, then seal the ends by pinching them.
- 3
Golden baking: Preheat the oven to 180°C (convection). Place the rolls on a baking sheet with parchment paper, seams underneath. Brush lightly with olive oil. Bake for 18-20 minutes until golden brown and puffed up.
- 4
Serving: Let cool for 5 minutes before enjoying - the cheese will be perfectly melted without being too hot.

- Sealing: Pinch the ends well to avoid filling leaks during baking.
- Thickness: Roll the dough thin enough for a good filling/dough ratio, but not too thin to prevent tearing.
- Cheese: Young Comté melts better than aged, prefer it for perfect melting texture.
- Browning: For more intense color, you can give a final grill for 1-2 minutes.
- Storage: These rolls keep for 2 days in an airtight container, ideal for lunchboxes.
- Variations: Try the vegetarian version with sautéed mushrooms and nuts, or the spicy version with chorizo and peppers.
