Preheat the oven to 190°C (fan) or 200°C (conventional). Line a baking tray with parchment paper.

Unroll the cold puff pastry on a floured surface. Cut into 3 cm wide strips, then into 8-10 cm long rectangles.

Cut the ham into strips. Grate the cheese. On each rectangle, place a strip of ham and cheese, leaving a 0.5 cm border.

Roll each rectangle tightly. Place the seam side down and press the ends to seal.

Mix the egg yolk with the milk. Generously brush each rolled pastry with this mixture.

Place the pastries on the tray, seam side down, spacing them 2 cm apart. Bake in the middle of the oven for 18 to 22 minutes until golden and puffed.

While baking, prepare the dip by mixing the fresh cream, mustard, salt, and pepper. Add herbs if desired. Refrigerate.

Let the pastries cool for 2-3 minutes after baking. Serve warm with the sweet mustard dip.
