Cut the eggplant into ½ cm thick slices. Brush them with olive oil and grill them in a pan or oven for 4-5 minutes per side until tender and golden. Salt, pepper and sprinkle with oregano.

Spread the 8 slices of bread with pesto. On 4 slices, arrange the grilled eggplants, tomato slices, drained and sliced mozzarella, and optionally arugula. Cover with the remaining slices.

In a pan: Heat a drizzle of olive oil and brown the sandwiches 3-4 minutes per side over medium heat, pressing lightly. In the oven: Bake at 200°C for 8-10 minutes until the bread is crispy and the cheese is melted.

Serve immediately, cut diagonally to reveal the beautiful layers.
