Crush the biscuits into fine crumbs. Mix them with the melted butter until sandy. Incorporate the chopped hazelnuts. Press firmly into the bottom of a lined springform pan. Refrigerate for 30 min.
- 2
In a large bowl, whisk the softened cream cheese with powdered sugar until smooth. Add the chocolate-hazelnut spread and hazelnut powder. Whisk until homogeneous.
- 3
For stabilization (optional): Soak gelatin in cold water for 5 min. Squeeze and melt it in 3 tbsp of hot cream. Incorporate into the cream cheese mixture while whisking. (For agar-agar, melt it in 4 tbsp of cream, bring to a boil for 30 sec, then incorporate).
- 4
Whip the remaining cold cream until stiff peaks form. Gently fold it into the cream cheese mixture using a spatula, lifting to keep it airy.
- 5
Pour the filling onto the chilled base. Smooth the surface. Cover with plastic wrap and refrigerate for at least 6 hours, ideally overnight.
- 6
To unmold, run a thin, warm knife around the edge. Open the pan. Decorate with drizzles of warmed chocolate-hazelnut spread, roasted hazelnuts, chocolate shavings, and a dusting of cocoa.

- Temperature: Cream cheese must be at room temperature to avoid lumps.
- Whipped cream: The cream and utensils must be very cold for stiff peaks.
- Packing: A well-packed base ensures it won't crumble when cut.
- Unmolding: A hot towel wrapped around the pan helps with clean unmolding.
- Serving: Serve with a quenelle of whipped cream, a scoop of vanilla ice cream, an espresso, or a glass of cold milk.
