These delicious little crepes, filled with a melting heart of caramelized banana, transform a simple snack into an exceptional moment. Perfect for an elegant brunch or a sweet break, they will delight young and old with their simplicity and refinement. The recipe combines speed and indulgence: in just 30 minutes, you get a dozen golden and fragrant mini pancakes. The secret lies in using very ripe bananas, whose natural sugar caramelizes delicately during cooking, creating a sublime contrast with the lightly sweetened batter. The two-step cooking technique traps the banana inside the pancake for a surprise with every bite. These mini pancakes can be varied endlessly: add chocolate chips, pecans or a touch of cinnamon to vary the pleasures. Served warm with a drizzle of maple syrup or accompanied by a scoop of vanilla ice cream, they offer a complete sensory experience.
