In a non-stick pan, cook the bacon over medium heat for 5-7 minutes until golden and crispy. Drain on paper towels to remove excess fat.

In a large bowl, beat the eggs with the fresh cream until you get a homogeneous mixture. Add nutmeg, salt moderately (bacon is already salty) and pepper generously.

Incorporate the cooled bacon and grated cheese into the mixture. Mix gently for even distribution.

Preheat the oven to 180°C. Generously butter 12 cavities of a muffin tin. Distribute the preparation by filling each cavity 3/4 full. Bake for 20-25 minutes until the quiches are well risen and golden.
