Peel and finely grate the potatoes. Place them in a clean cloth and press firmly to remove as much moisture as possible (this step is crucial to get crispy patties).

In a large bowl, mix the drained potatoes with finely chopped garlic, grated Parmesan, beaten egg and flour. Salt and pepper generously. Mix well until you get a homogeneous preparation.

Heat 2 tablespoons of oil in a large pan over medium heat. Place spoonfuls of batter, flattening them slightly to form patties 8-10 cm in diameter. Cook 3-4 minutes per side until golden brown and crispy.

Place the patties on paper towels to remove excess oil. Sprinkle immediately with additional Parmesan and chopped parsley if desired.

- The more you press the potatoes, the crispier the patties will be
- Maintain medium heat to cook the inside without burning the outside

- If the batter is too wet, add a little more flour
