Unroll the puff pastry on parchment paper. Cut into 4 equal squares. On each square, make parallel cuts on the sides (without cutting to the center) for a decorative effect.

In a bowl, mix the drained tuna, cream cheese, pepper, parsley, chives, sliced olives and lemon juice. Taste and adjust seasoning.

Divide the filling onto the center of each pastry square, leaving the edges free. Sprinkle with grated cheese.

Fold each square into a triangle by bringing two opposite corners to the center. Seal edges with a fork.

Brush the pockets with beaten egg and sprinkle with sesame seeds.

Preheat oven to 200°C. Bake the pockets on a baking sheet for 20 minutes, until golden brown.

- If using tuna in oil, drain it well and adjust salt carefully, as it may already be salty.
