Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain, reserving a ladle of cooking water, and set aside.

For fresh salmon: In a hot pan, cook the salmon with a drizzle of oil for 2-3 minutes per side until it flakes easily. Remove the skin and flake the flesh. For smoked salmon: Simply cut into strips.

In the same pan, sauté the minced shallot in oil or butter until translucent. Pour in the cream, lightly salt (be careful, salmon is already salty), generously pepper.
