Prepare the dough: mix flour, yeast, salt and sugar. Add warm water and olive oil. Knead for 10 minutes until you get a smooth ball.

Let the dough rise for 1 hour in a warm place, covered with a damp cloth.

Prepare the filling: sauté crumbled Italian sausage. Add chopped garlic and fresh spinach.

Mix the preparation with ricotta, grated mozzarella, nutmeg, salt and pepper.

Divide the dough into 4 equal parts. Roll each ball into a disk about 20cm in diameter.

Fill one half of each disk with the preparation, leaving 2cm free border. Fold over and seal edges well.

Brush calzones with egg yolk and bake at 220°C for 15-20 minutes until golden.
