In a bowl, work the soft butter with the grated Parmesan until creamy. Incorporate the egg yolk and mix vigorously.

Add the flour, rosemary, salt, and pepper. Mix with a spatula, then quickly form a dough ball with your hands. If too crumbly, add a teaspoon of cold water.

Flatten the ball into a disk, wrap in plastic wrap, and refrigerate for 15 min. Shape into a regular log 4-5 cm in diameter, rewrap, and refrigerate for another 15 min.

Preheat the oven to 180°C (356°F). Slice the log into 1 cm thick rounds and place them on a baking sheet with parchment paper, spaced apart.
