Preheat the oven to 220°C (425°F). Flour a work surface, roll out the dough into a 30-32 cm circle. Transfer to a baking sheet with parchment paper.

In a pan, heat the oil. Infuse the garlic for 30 seconds. Sear the squid rings for 2 min, add the shrimp for 1-2 min. Add the mussels, season with chili, salt, pepper. Cook 1 more min, drain well and set aside.

Spread the tomato sauce over the dough, leaving a 1 cm border. Distribute the mozzarella, then arrange the drained seafood. Drizzle with a little olive oil.

Bake for 12 to 15 minutes, until the dough is golden and the cheese is melted and bubbling.

Remove the pizza, sprinkle with chopped parsley/basil and drizzle with lemon juice. Let rest for 2 minutes before slicing.

- Pre-cooking the seafood is essential to remove excess water and concentrate flavors. Drain them well after sautéing to avoid a soggy pizza. If using fresh mozzarella balls, drain and dry them before crumbling. For variation, add scallops, small octopus, a pinch of saffron in the oil, or replace the tomato sauce with lemon-garlic cream for a white version. Serve with arugula salad and a dry white wine or Provencal rosé.
