    Prepare the leeks: cut off the roots and dark green leaves, split them, wash thoroughly and thinly slice the white and light green parts.

    In a pan, heat the oil or butter over low heat, add the leeks and chopped shallot. Sweat for 15-20 min covered until tender. Evaporate the juice uncovered, season with salt, pepper and nutmeg. Set aside.

    Prepare the filling: in a bowl, beat the eggs. Incorporate the sour cream and milk. Add the cooled leeks, shrimp, grated cheese and lemon juice. Mix gently. Taste and adjust seasoning.

    Preheat the oven to 180°C. Roll out the pastry in a 24-26 cm tart pan, prick the bottom. Optional: blind bake for 10 min. Pour in the filling and smooth the top.

    Bake first on the bottom rack for 10 min, then move to the middle rack for an additional 30 min (40 min total). The tart is ready when the filling is golden and set.

    Remove the tart from the oven and let it rest in the pan for at least 10 minutes before slicing.

Tips & Tricks
  • Thoroughly wash the leeks by splitting them almost the entire length and spreading the leaves under running water to remove all sand.
  • Sweat the leeks over low heat and covered to make them tender without browning. Evaporating their water well prevents a soggy tart.
  • For a perfectly crispy tart base, blind bake the pastry for 10 minutes (covered with parchment paper and pie weights) before adding the filling.
  • Use good quality shrimp, well drained. You can cut them into pieces if they are large.
  • Serve the tart warm or at room temperature, accompanied by a mesclun salad with a light lemon vinaigrette. Pair with a dry, aromatic white wine.
  • Variations: replace 100g of shrimp with smoked salmon, add fresh herbs, flavor the leeks with mild curry powder, or use lactose-free substitutes (soy cream and nutritional yeast).
