In a large bowl, mix the semolina, flour, sugar, both yeasts, and salt.

Gradually add warm water, warm milk, and the egg. Whisk vigorously for 2-3 min until smooth.

Optional: Blend the batter for 20-30 seconds with a mixer to aerate and make it lighter.

Cover and let rest for 1h at room temperature. The batter should rise slightly.

Heat a non-stick pan over medium heat, lightly oil. Pour a ladle of batter, spread into a circle.
