Cook the noodles according to package, slightly reducing the time. Drain, rinse with cold water and mix with a little oil. Set aside.

Mix 1 tbsp soy sauce, cornstarch and 1 tsp oil. Add the beef and let marinate for 10-15 min.

In a very hot wok with oil, sauté the garlic and chili for 30-60 sec. Add the beef in a single layer, sear for 1 min then stir-fry for 2-3 min. Set aside.

In the same wok, stir-fry the onion and bell pepper for 2-3 min over high heat until colored but crisp.

Reduce heat, add the remaining soy sauce, chili sauce, vinegar, sugar and oyster sauce. Mix and simmer for 30 sec.

Return the beef and add the noodles. Toss vigorously for 2-3 min until everything is coated in sauce and hot.

Off the heat, check seasoning. Serve immediately garnished with chopped spring onions.

- Cut the beef against the grain for more tender meat.
- Use maximum heat to sear the ingredients quickly and give them a nice color.
- Prepare all ingredients before starting cooking, which is very fast (mise en place).
- Do not overcook the noodles in water, they will finish cooking in the sauce in the wok.
- Serve with lime wedges or rice vinegar on the side to balance the flavors.
