Prepare the pesto: blend the pistachios, parmesan, garlic, and olive oil until a coarse paste forms. Add the ricotta, season with salt and pepper, and mix until homogeneous.

Unroll the puff pastry on a floured surface. Spread the filling evenly, leaving a 1 cm border.
