    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain, reserving a cup of pasta water, and set aside.

    Cut the chicken fillets into strips or cubes. In a bowl, mix the chicken with Cajun spices. In a large hot skillet, heat olive oil and brown the chicken for 5 to 7 minutes until well cooked and crispy. Set aside.

    In the same skillet, melt the butter. Add the chopped onion and sauté for 4 to 5 minutes until tender. Add the minced garlic and sauté for 1 more minute. Pour in the cream, milk, additional spices and grated Parmesan. Mix over low heat until the sauce thickens slightly.

    Return the chicken to the hot sauce. Add the cooked pasta and gently mix to coat well. If the sauce is too thick, adjust the consistency with a little pasta water. Generously pepper.
