Preheat the oven to 200°C. Wash and brush the potatoes. Brush them with olive oil, salt lightly and bake for 45-50 minutes until tender.

Meanwhile, mix in a bowl the thick cream, lemon juice and zest. Finely chop half of the dill and incorporate it into the cream. Pepper generously.

Let the potatoes cool slightly. Cut them in half lengthwise. Gently scoop out part of the flesh while keeping a solid border. Fill each half with the dill cream.

Place strips of smoked salmon on the cream. Sprinkle with the remaining chopped dill and a turn of the pepper mill.
