Pat the halloumi dry and slice it into 1 cm thick slices. For easier slicing, place it in the freezer for 10 minutes.

In a bowl, mix the olive oil, chopped garlic, chopped parsley, and thyme. Add pepper. Generously brush both sides of the halloumi slices.

Heat a pan over medium-high heat. Cook the slices for 3-4 minutes without moving them, until nicely golden underneath. Flip and cook for another 2-3 minutes.

Serve immediately on a warm plate. Optionally drizzle with a little lemon juice and sprinkle with additional fresh herbs.

- A very hot pan is essential to sear the cheese and get a crispy crust without sticking.
- Do not stir the slices before they detach on their own from the pan, a sign they are perfectly caramelized.
- If the halloumi is too salty, soak it in cold water for 10 minutes before patting dry and cooking.
- Lemon variation: squeeze the juice of half a lemon into the pan after flipping the slices to create a quick sauce.
