Drain the mozzarella, cut into 12 cubes and shape into smooth balls with damp hands.

Prepare three bowls: cornstarch, beaten egg, and a mixture of Emmental, Cheddar, panko and pepper.

Coat each ball: first in cornstarch, then in egg, finally in the cheese/panko mixture, pressing well.

Insert a wooden stick into the center of each ball. Freeze for 10 min or refrigerate for 20 min.

Pan cooking: heat oil over medium-low heat. Cook for 6-8 min, turning until golden. Oven: 200°C, 10-12 min.

Drain on paper towels. Serve immediately with dipping sauces.

- Use 'pizza' mozzarella which is less moist to prevent it from becoming too liquid.
- Press the coating well to form a homogeneous shell that will hold during cooking.
- Do not exceed 10-15 min in the freezer to avoid a too cold center. Chilling firms up the cheese.
- Cook over medium-low heat for a melting center without burning the coating.
