
Caramelized Pear, Bacon & Gorgonzola Puff Pastries

Preheat the oven to 170°C (340°F). Prepare ingredients: slice pear thinly, cut bacon into lardons, crumble gorgonzola. If using raw pastry, cut 6 squares and blind bake 10-12 min at 180°C (350°F).

In a pan, melt butter over medium heat. Caramelize pear slices 2-3 minutes per side, then set aside.

In the same pan, cook bacon over slightly higher heat for 3-4 minutes until crispy. Drain on paper towels.

Meanwhile, reheat pre-cooked puff pastries in the oven for 4-5 minutes to make them extra crispy.

Assemble: on each warm pastry, place bacon, caramelized pear slices, crumbled gorgonzola, pepper. Optionally add walnuts and a rosemary sprig. Serve immediately.

- Choose a pear that is just ripe but firm so it doesn't fall apart during cooking. Drain the bacon well on paper towels to prevent the pastry from becoming greasy. Gorgonzola has a strong flavor, it's better to add more after the first bite. For a refreshing variation, replace the pear with Granny Smith apple.
