Prepare the dough: Mix flour and salt in a bowl. Add butter and rub with fingertips. Incorporate the egg, then gradually add water until you get a homogeneous and supple dough. Form a ball, wrap in plastic wrap and let rest in the fridge for 30 min.

Prepare the filling: Mix in a bowl the diced ham, grated cheese and cream (if used). Lightly pepper.

Assembly: Roll out the dough on a floured surface to 2-3 mm thickness. Cut out circles of 10-12 cm diameter. Place 1 to 1.5 tablespoons of filling in the center of each circle. Fold to form a half-circle, seal edges with a little water and crimp with a fork or twist for a rustic finish.

Baking: Arrange the empanadas on a baking sheet lined with parchment paper. Brush with egg wash (egg yolk + milk). Bake for 20 to 25 minutes, until golden brown.

- For a crispier dough, use very cold butter and work quickly. You can replace homemade dough with store-bought shortcrust pastry to save time. Serve with spicy tomato sauce or chimichurri to enhance the flavor.
