- 1
Preheat your oven to 200°C. Spread the puff pastry on a baking sheet lined with parchment paper. Let it come to room temperature for 5 minutes.
- 2
Lightly spread the pastry with mustard, leaving a 3 cm border. Arrange the ham slices evenly. Sprinkle the grated cheese in a regular layer. Pepper to taste.
- 3
First fold the short edges 3 cm inward. Then fold the long edges to form a tight rectangle. Carefully seal all edges by pressing firmly with the tines of a fork.
- 4
Beat the egg yolk with the milk. Generously brush the entire surface of the pastry with a food brush. Sprinkle with sesame seeds for decoration.
- 5
With the tip of a knife, make 5-6 small slits on top to allow steam to escape. Bake for 20-25 minutes until the pastry is golden brown and crispy.
- 6
Remove from the oven and let rest for 5 minutes before cutting. Serve hot with a dressed green salad.

- Handle the pastry quickly to keep it flaky
- Grate the cheese yourself for better melting
- Watch the coloring during the last 5 minutes of baking
- Reheat for 5 minutes in the oven at 180°C
- Variations: add sautéed sliced mushrooms, replace ham with smoked salmon, or vegetarian version with creamed spinach
