Cut the beef into large cubes. Peel and slice the carrots. Peel the potatoes (whole or in large pieces). Crush the garlic.

Brown the bacon lardons in hot oil until golden. Set aside.

In the same pot, sear the beef pieces on all sides until browned.

Sprinkle with flour, stir for 1 minute to coat the meat.

Add the carrots, pearl onions, garlic and bacon. Mix.

Pour in the red wine and broth. Add the bouquet garni, salt and pepper. Bring to a boil then reduce heat.

Cover and simmer over low heat for 2 hours, stirring occasionally.

Add the mushrooms and potatoes. Continue cooking for 30 minutes.

Sprinkle with chopped parsley, remove the bouquet garni and serve hot with bread.
