Preheat the oven to 200°C. Peel the carrots and cut them into regular sticks.

In a bowl, mix the carrot sticks with olive oil, salt, pepper, garlic powder, and paprika.

In a bowl, mix the breadcrumbs and grated parmesan.

Coat the seasoned carrots in the breadcrumb-parmesan mixture.

Arrange the carrots on a baking tray with parchment paper, without overlapping.

Bake for 25 minutes, turning halfway. Sprinkle with chopped parsley when out of the oven.

For the sauce: mix the mayonnaise, hot sauce, and lemon juice.

- For perfect crispiness, space the carrots well on the tray and use the grill mode for the last 3-5 minutes. Serve immediately with the sauce to enjoy the texture.
- Variations: replace parmesan with nutritional yeast for a vegan version, or try with sweet potatoes. The sauce can be made with yogurt and curry.
