Prepare the girolles by gently brushing them without rinsing under water. Cut the largest ones in half and keep the small ones whole.

In a pan, heat oil and butter. Sauté onions and shallot for 5-6 minutes, then add girolles and sauté for 6-8 minutes until water evaporates and golden color. Add thyme and pepper.

Preheat oven to 190°C. Line a tart pan with puff pastry, prick the bottom and bake for 7 minutes blind.

In a bowl, whisk eggs until frothy. Gradually add cream and milk, then salt, pepper and grated cheese.

Spread the girolle mixture on the pre-baked pastry. Pour the creamy mixture, distributing gently.

Bake for 30-35 minutes at mid-height until edges are golden and center is set. Let rest 5-10 minutes.

Sprinkle with chopped parsley just before serving.
