    Preheat the oven to 180°C. Line a baking sheet with parchment paper.

    Whisk the whole eggs with the sugar until the mixture whitens and doubles in volume. Gently fold in the sifted flour and hazelnut powder, then the vanilla extract.

    Spread the batter evenly on the sheet and bake for 10 minutes, until the sponge is golden and flexible.

    Meanwhile, prepare the cream: cook the peeled and diced pears with a little sugar until reduced. Blend into a puree. Soak the gelatin. Whip the fresh cream with the sugar and the seeds from the vanilla bean. Incorporate the cooled pear puree and the squeezed, melted gelatin. Chill.

    When the sponge comes out of the oven, flip it onto a damp cloth, remove the paper, and roll it up lightly with the cloth. Let it cool.

    Unroll the sponge, brush with syrup (sugar and water brought to a boil), then spread the pear-vanilla cream. Roll up again gently but firmly.

    Chill the log for at least 2 hours. Before serving, decorate with crushed hazelnuts.

  • For a perfect roll, don't wait for the sponge to cool completely before rolling it for the first time with the cloth. This prevents it from cracking.
