Cut the chicken fillets into pieces. Blend them in a food processor with salt, pepper, garlic and onion powder until you get a smooth and homogeneous texture. Form evenly sized nuggets by slightly moistening your hands.

In a bowl, mix the flour, egg, cold water and paprika. Whisk vigorously until you get a smooth, lump-free batter with the consistency of thick pancake batter.

Dip each nugget in the frying batter, turning them to coat well. Heat oil to 180°C in a deep fryer or deep saucepan. Fry in small batches for 4-5 minutes until golden brown and crispy. Drain on paper towels.

In a small bowl, mix the mayonnaise, fresh cream, honey, paprika, chopped chives and lemon juice. Pepper generously and mix until you get a creamy, homogeneous texture.
