Preheat oven to 200°C. Cut 12 discs from one puff pastry sheet and place on a tray. Cut 12 discs from the second sheet, then cut a smaller circle in the center of each to make rings.

Moisten the edges of the base discs. Place a ring on each disc to form a border. Place the tray in the freezer for 10 min.

Fry the bacon lardons for 4-5 min. Drain. Mix the lardons, fresh cheese, diced mozzarella, herbs, and pepper.

Mix the egg yolk and milk. Brush the edges of the bites. Bake for 12-15 min until golden and puffed.

Gently hollow out the center of the bites. Fill with the cheese/bacon mixture. Bake for an additional 3-4 min.

Let cool for 2-3 min before serving.

- Keep the pastry cold for better layering. Chill in the fridge if needed.
- Brush only the edges with the egg/milk mixture to allow the center to puff up well.
- Drain the bacon lardons well to avoid making the pastry soggy.
- Fill after the first baking for light and well-risen bites.
