In a non-stick pan, crumble the sausage and cook over medium heat for 5-7 minutes until well cooked and lightly browned. If using onion, add it and cook until translucent. Drain excess fat on paper towels.

In a large bowl, beat the eggs with the cream until you get a homogeneous and slightly frothy mixture. Incorporate the grated cheese, salt moderately (the sausage is already salty) and pepper generously.

Preheat the oven to 180°C. Generously butter 12 cavities of a muffin pan. Evenly distribute the sausage preparation at the bottom of each cavity.

Gently pour the egg-cream-cheese mixture over the sausage, filling each cavity 3/4 full. Bake for 20-25 minutes until the mini quiches are golden brown and firm to the touch.

Let cool for 5-7 minutes before carefully unmolding with a small spatula.
