Preheat the oven to 160°C. Crush the cookies into powder, mix with the melted butter and press into a lined 20 cm springform pan. Bake for 10 minutes and let cool.

Blanch the peaches in boiling water for 30 seconds, then in ice water to peel them. Pit and cut into 1 cm slices. Drizzle with lemon juice.

Whisk the softened cream cheese with the sugar. Add the eggs one by one, then the heavy cream and vanilla. Mix until smooth.

Pour half of the batter onto the cooled base. Arrange the peach slices in a layer. Cover with the remaining batter.

Bake for 45 to 50 minutes at 160°C. The center should still wobble. Let cool in the turned-off oven for 1 hour, then at room temperature and finally in the fridge for at least 4 hours.

Unmold by running a hot knife around the edge. Decorate with peach slices. Glaze with heated and strained apricot jam.

- Choose ripe and fragrant peaches for more flavor.
- All ingredients should be at room temperature for a smooth mix.
- When it comes out of the oven, the center of the cheesecake should wobble: this is normal, it will set while cooling.
- The apricot jam glaze protects the fruit and gives an appetizing shine.
- Serve chilled but not ice cold. Accompany with a raspberry coulis or a scoop of vanilla ice cream.
- Grilled peaches: lightly grill the peach slices in a pan before incorporating.
- Almonds: add 50g of ground almonds to the batter and decorate with toasted flaked almonds.
- Ginger: incorporate 1 teaspoon of freshly grated ginger for a spicy note.
- Vegan: use plant-based cream cheese, soy cream, and agar-agar.
