    Cooking the rice: Bring a large pot of salted water to a boil. Add the rice and cook according to package instructions. Drain thoroughly and set aside.

    Preparing the vegetables: Wash and cut the zucchini and eggplant into regular cubes. Remove seeds from peppers and cut into strips. Finely slice the onion and chop the garlic. Cut the tomatoes into cubes.

    Cooking the vegetables: In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 2 minutes. Incorporate all vegetables and sauté for 8-10 minutes. Add tomatoes, herbes de Provence and paprika. Salt, pepper and simmer for 10 minutes.

    Assembly and baking: Preheat oven to 200°C. Gently mix cooked rice with vegetable preparation. Pour into an oiled gratin dish. Sprinkle with grated cheese. Bake for 15-20 minutes until cheese is melted and golden.
