    Cooking the rice: Bring a large pot of salted water to a boil. Add the rice and cook according to package instructions. Drain thoroughly and set aside.

    Preparing the vegetables: Wash and cut the zucchini and eggplant into regular cubes. Remove seeds from peppers and cut into strips. Finely slice the onion and chop the garlic. Cut the tomatoes into cubes.
