Cut the fresh salmon into small, regular cubes. Place it chilled in a covered container.

Peel the mango and cut it into small cubes. If using avocado, also cut it into small cubes after peeling and pitting. Set aside.

In a bowl, mix the lime juice, soy sauce, sesame oil, honey (if used) and a pinch of pepper. Mix well.
