Cut the cauliflower into small florets. Cook for 10-12 minutes in boiling salted water. Drain, press in a cloth to remove water, then mash.

Cut the bacon into cubes, cook it dry until crispy. Drain on paper towels.

In a bowl, mix the cauliflower, cheese, bacon, eggs, flour, garlic, salt, and pepper. Get a thick dough.
