Prepare cold ingredients: cut butter into cubes and freeze 5 min. Finely grate the Comté. Beat the egg.

Sanding: In a bowl, mix flour, salt, ground pepper and thyme. Add frozen butter and rub with fingertips until sandy. Incorporate the Comté.

Assembly: Make a well, pour in egg and cream. Mix with spatula. Bring together into a ball without kneading. Flatten into a disk, wrap and refrigerate 30 min.

Shaping: Preheat oven to 180°C. Roll dough to 6-7 mm, cut out rounds. Place on baking sheet with parchment. Dampen tops, sprinkle with decorations.

Baking: Bake 12-15 min in middle rack until edges golden. Cool 10 min on sheet then on a wire rack.

- Keep everything cold to prevent dough from spreading. If it softens, refrigerate 10 min.
- Work quickly during sanding to keep butter pieces solid, creating crispy pockets.
- Grate the Comté finely for better distribution in the dough.
- Do not overbake, crackers continue cooking on the hot tray and should be pale golden.
