Prepare the avocado: Cut the avocados in half, remove the pit, then mash the flesh in a bowl until slightly chunky. Add the juice of half a lime, a drizzle of olive oil, salt, and pepper. Mix. For extra creaminess, optionally incorporate a tablespoon of fresh cheese or Greek yogurt. Set aside.
- 2
Prepare the shrimp: Cut the shrimp into small pieces (except 4 whole ones for garnish). Drizzle with lime juice, add salt, pepper, and a pinch of pepper if desired. Gently mix.
- 3
Prepare the tomato: Dice the tomato (or cut the cherry tomatoes into quarters). Season lightly with salt and pepper. Set aside.
- 4
Assemble the verrines: In each verrine, layer in order: a base of mashed avocado, a layer of diced tomato, then a layer of seasoned shrimp. Finish with some grated lime zest and chopped cilantro or parsley.
- 5
Garnish: Place a whole shrimp on top of each verrine. Add a bit more lime zest and a few fresh herb sprigs for the final touch.

- Storage: Prepare the verrines 1 to 2 hours in advance and keep them in the refrigerator. Add the shrimp and fresh herbs just before serving to maintain their freshness.
- Presentation: Use transparent verrines to showcase the beautiful colorful layers of the recipe.
- Variations: Try the exotic version with diced mango, or a crunchy note with finely chopped red onion.
- Serving: Serve well chilled, accompanied by crackers or toasted bread for a successful appetizer.
